Ingredients:
- 1/2 cup butter or coconut oil, room temperature
- 1/2 cup peanut butter
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup sourdough starter
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt (or substitute with bacon for a unique twist)
- Optional: maple syrup for drizzling
Instructions:
- Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper.
- In a mixing bowl, beat the egg. Add the butter/coconut oil, brown sugar, sourdough starter, and peanut butter. Cream them together until well combined.
- Add the baking powder, vanilla extract, and salt (or bacon if using). Mix everything together.
- Gradually add the flour to the mixture and continue mixing until a dough forms.
- Roll the dough into small balls and place them on the prepared baking sheet.
- Take a fork and gently press the dough balls, creating a crisscross pattern on top to flatten them slightly.
- Bake the cookies in the preheated oven for 12-15 minutes, or until the edges start to turn golden brown.
- Once baked, transfer the cookies to a cooling rack and allow them to cool completely.
- Optional: Drizzle the cooled cookies with maple syrup for an extra touch of sweetness.
